Way, way, way too many!!! I absolutely love the Gladiator score - amazing use of voices. LOTR is another fantastic orchestration. Shakespeare in Love is probably the film whose soundtrack is so spectacularly grafted to the movie, though....
That is to say nothing of the genius that was Michael Kamen - the Band of Brothers theme is exquisite...
Morricone's piece Gabriel's Oboe from The Mission is also gorgeous...

Everyone is a genius,

For me, it's got to be the music for Schindler's List.

I have a few favourites - Reservoir dogs theme track is cool but its 7 mins into the film oddly enough - Also like Apocolypse now - weird but cool - brilliant film.
