Tiger Prawns with Hot Garlic Butter
Serves 4 as a Starter
12ozs Tiger Prawns cooked and peeled
4ozs Butter
1 lge Garlic Clove well crushed
Finely grated zest of 1 Lemon
2 tbls Lemon Juice
Freshly ground Pepper and Sea Salt
8ozs mixed Salad Leaves
2ozs Fresh Peas or Mangetout
2 Plum Tomatoes roughly chopped
1tbls parsley chopped
Garlic Butter
Melt butter with garlic lemon zest cook slowly 3mins add lemon juice and seasoning set aside
Prepare salad
to serve heat the garlic butter add the parsley and prawns mix well heat through divide the shellfish over servings of salad drizzle over a little extra butter serve with crusty bread
