I'm going to try to 'invent' a new sauce for Christmas. The ol' cranberry sauce needs a bit of pepping up, so I am going to add some fresh pomegranate kernals, maybe on a 40/60 ratio... with a dollop of good port. Sweet!

May not be exactly for christmas, but try a Port and Stilton sauce over a medium rare steak ... it's absolutely delicious
Madeira sauce flavoured with orange zest, rosemary and thyme....great with all types of poultry!
