Hi my son has allergies so have to avoid cow milk/dairy products, soya, lactose.

We have been buying bread from the free from section but feel he could do with something a little bit fresher if anyone has any recipies they would be gratefully received.

Even normal recipies would be a great help they dont have to be dairy free as I can change marg and milk to his own makes. Can be made by hand or machine whatever is easiest for me as I'm a novice!

Hi we make all our own bread, there use to be a really good one on the back of the strong flour packets. My kids are allergic to milk so I just miss out the milk powder in any recipes that has it, I put oil in instead of butter and that works fab too.

Basic White

500g strong white flour
25g butter
1 1/4 tsp salt
1 1/2 fast acting yeast
300 ml warm water

2tsp sugar will give added flavour and thicker crust (optional)

Mix the flour, sugar and salt then rub in the butter then stir in the yeast
stir in the water and mix into a soft dough
knead for 5 mins in an electric mixer or 10 mins by hand
shape the dough and place in greased 2lb loaf tin.
Cover with a clean damp cloth and leave in a warm place (1.5 - 2 hrs) till double in size
uncover and cook 230oc for 30 - 35 mins



I sometimes do it in my mixer which means I throw all the ingredients in at the same time and use the dough hook for 5 mins.

Good luck let me know if you want brown bread or some different ones as have loads of bread books

Honey banana whole wheat bread - basic bread setting

1.5 lb loaf.......................................... 2 lb loaf
************************************************** ******
1/2 cup warm water________________ 2/3 cup warm water
1 tbsp butter or veg oil______________1-1/2 tbsp butter or veg oil
3 tbsp honey_____________________1/4 cup honey
1 egg___________________________1 egg
1/2 tsp vanilla____________________1/2 tsp vanilla
1 cup whole wheat flour____________ 1-1/2 cup whole wheat flour
1-1/4 cup bread flour_______________1-1/2 cup bread flour
1 small banana sliced_______________1 banana sliced
1-1/2 tsp poppy seeds______________2 tsp poppy seeds
1/2 tsp salt_______________________1 tsp salt
1-1/2 tsp dry yeast_________________2 tsp dry yeast

add all ingredients to bread pan in the order given

Hi thanks for recipies tried white one yesterday and he loved it. How long does it normally stay fresh for? Could I be cheeky and ask allsorts for the wholemeal one just to give him a change for next try. Is there any milk free recipie books you could advise on I just feel like I'm cooking him the same boring things all the time, he's only 10month but will eat anything, still working our way through different food items incase of any further allergy developments but I think he'll be lucky and only have these ones to aviod. Here's hoping anyway!

Havent tried the honey one yet but will once i get the basics under my belt.

Just the same way as the white

I have an allergie cook book if you want to borrow it, also loads of bread books if you want to borrow one and try some other recipes.

I remember when I first started cooking milk free for my daughter it was a bit of a mindful...now I pretty much adapt any recipe just changing the milk, butter etc in it. It does get easier over time a good web site is goodness.direct they are really quick at delivering and you can get loads of milk free stuff etc from them. I must do anther order soon as my kids are after ice cream!!
