CELERIAC AND PEAR SOUP

1 TBLSP OLIVE OIL
15g BUTTER
1 CELERIAC ABOUT 650g
PEELED AND CHOPPED
1 LARGE ONION
2 PEARS COMICE OR CONFERENCE
CHOPPED
JUICE OF HALF A LEMON
900ML CHICKEN STOCK


1. COOK THE VEG AND FRUIT
Heat the oil and butter stir in celeriac,onion and pears. Add the lemon juice. Cover and cook over a low heat for about 10 mins. Add 200mls stock and cook for 5 mins more or until veg is softened.
2. PUREE THE SOUP
Add the rest of the stock and blend until smooth.
