I love angel cake - but it only uses about six egg whites. In this day and age it seems wasteful to throw away the yolks. has anyone any recipes that use the yolks only?

Custard Recipe

1 pint (570ml) double cream
6 large egg yolks
4 teaspoons cornflour
2 tbsp caster sugar
few drops vanilla essence

Mix the egg yolks, cornflour, caster sugar and vanilla.
Heat the cream until it gets to boiling point, then add to the other mixture, stirring all the time.
Return to the pan and heat gently, stirring all the time, until it thickens.

You can freeze them if you are not goin to use them straight away - look up "freezing egg yolks" there are a few different opinions as they may coagulate on freezing but the addition of salt or sugar prevents this apparently!

I add extra yolks to scrambled eggs and a touch of milk or cream to compensate for the whites. Delicious.

think i'll give that one a miss. My mother used to force raw switched eggs with milk down our throats as she thought it was good for us - my stomach still turns at the thought of it - especially the stringy white bit!

You could dip bread in it and fry it as well.
