One heart will feed you. Two leaves you well satisfied.

Cut longwise, along the septum. Trim off any gristle from the tubey-things on top;

Wash out under a warm tap, getting a good guddle around to clear congealed blood;

Stuff to bursting with filling of choice (Paxo is good), being sure to fill all nooks and crannies;

Bind with string;

Fry a bit of onion and spare vegetables with spices enough liquid (tomato puree is good) to rest hearts in half inch or so of gooey fluid;

Roast a Gas Mark 5 or so for 40 minutes, or until cooked through.

Enjoy!

Amana, I was referring to Leopold Bloom's idea of a good meal. James Joyce [1] was an accomplished singer, and the bizarre syntax and sounds in his writings often makes sense when you read it out loud. Oral pornography!

And my current book is as good as it was the first time around.

I realy have to say i wonder why ppl are so afraid of offal - so many prepaired meals and burgers etc. are full of it - sausages generally have it and the skin is offal, burgers are generally made from leftovers - gravies are enrichened by it so what with the squeemish ness - i put a plate of hear in front my sister after triming it and did not tell he said it was grerat offered same thing undisgused andd was refused flat - i wish ppl would just see it what it was MEAT.. and hey for all us scots haggis is 90% offal !!!

That sounds lovely, must see if I can get hearts next time I'm out shopping. Not managed to get kidneys the last few times grrrr.

I like liver baked with tomatos, mushrooms and onions or pate. As well as heart and Kidneys, all so full of flavour.
