Was chatting to a friend the other day about mackerel (mackeral??) pate - the fish shop in Thurso sells a beautiful one, which is lovely spread on fresh brown bread with some lemon juice.
I've raked through my cook books but can't find a recipe. Can anyone provide one? Cheers!
well I kind of make it up as I go along!
couple of mackerel fillets - skin removed
some philidelphia cream cheese
and a squeeze of lemon
all thrown into the food processor and blended until it is a consitiency that I like (I like it smooth)
sometimes also add in some creme fraiche or butter - kind of wing it a bit!

I catch the mackeral and my husband does the rest :)
He normally home smoked them then fillet meat off bones, check for no loose little bones. Then 3 parts mackeral to one part butter adding flavours such as onion garlic chives herbs. Blitz to a fine consistency. Some seasoning to taste as you go.
