This recipe is in the Laurandy Centre Recipe Book thread.
I have moved it to the main recipe posts because some people have asked for it again.
1 watermelon, seeds removed and cut into bite sized pieces.
1 tbsp chopped fresh mint
1 large onion, (preferably a Spanish onion) thinly sliced.
For the sauce
2 tbsp olive oil
1 tbsp fresh lemon juice
½ tsp clear honey
½ clove garlic, crushed
1 tsp mixed herbs
Salt & pepper
Put the melon pieces in a bowl, sprinkle on the mint and mix.
Put all the sauce ingredients in a screw top jar and shake well to mix.
Put the onions in a separate bowl and mix with the sauce.
Leave the melon and onions for an hour, stirring the onions occasionally.
Mix the onions with the watermelon just before serving.
This may sound strange but, believe me, it tastes heavenly and is unbelievably refreshing on a warm summer evening.
