This ones for Ciderally
Makes 1 large loaf
15g / ½ oz fresh yeast
750g / 1 ½ lb wholemeal flour
2 tsp salt
450 ml / ¾ pint water
1 tbsp olive oil
1 large onion, finely chopped
10 olives, stoned and quartered
1 tbsp each fresh chopped parsley, thyme and sage.
1 tbsp sesame seeds
Cream the yeast with a little warm water and leave until frothy.
Mix the flour and salt together in a bowl and add the onions, olives and herbs.
Add the water, oil and yeast and mix to a dough.
Knead on a floured surface until smooth and elastic.
Place in a clean bowl, cover with a damp cloth and leave to rise in a warm place. The dough should double in volume.
Tip out onto a floured surface and knead for a few minutes.
Form into a wide roll and place on a greased baking sheet.
Brush with water and sprinkle with sesame seeds.
Cover with a cloth and leave to rise again in a warm place. The dough should double in size in again.
Pre-heat the oven to 220°C / 425°F / gas 7
Bake the bread for 15 minutes then turn the oven down to 190°C / 375°C / gas 5 and bake for a further 30 minutes.
When the bread is done it will sound hollow when tapped.
Allow to cool on a wire rack
