Rhododendrons and azaleas are most colourful probably and easy to grow because of the peaty soil.
Escalonia is one of the best - green all year round, pink/red flowers and withstands even the harshest salt winds and frosts. Good for planting around the edge as shelter and protection for garden.
Flowering currant is another grows well in Caithness, survives wind and salt.
Best of luck with your garden
