Does anyone have a recipe for making a cheesecake.
Try the BBC website there are numerous recipes there. If you can think it they have it pretty much.
Heres one I haven't made earlier

Lemon and Vanilla Cheesecake
BASE
50g/2oz softened unsalted butter
150g/5oz digestive biscuits
TOPPING
300ml/11fl oz sour cream
FILLING
340g/12oz full-fat cream cheese (Philadelphia)
150g/5oz golden caster sugar
4 medium eggs
zest and juice of 1 lemon
2tsp vanilla extract
1 vanilla pod
handful of raisins
1. Preheat the oven to 180c /350f/gm4
2. Start making the base by melting the butter in a small saucepan.
3. Crush the digestive biscuits and add to melted butter. Stir until mixed.
4. Press mixture into the base of a lightly greased 30cm/8in cake tin with removable collar.
5. Place all the filling ingredients except the raisins , into a mixing bowl. Mix until smooth then stir in the raisins. Pour over the biscuit base.
6. Bake for approximately 30 mins until just set. It does firm up once cooled.
7. Cool for 10 mins then smooth the sour cream over the top. Return to the oven and cook for a further 10 mins.

From the Nestle website with my variation on it:
10 oz digestives (ish)
6 oz marg/butter/whatever you use (ish)
melt the butter and crush the biscuits and add together
press into a cake tin/flan tin and put in fridge
2 tubs mascarpone cheese
1 tin condensed milk
2 lemons or 2 small or 1 large orange (I didna have lemons so used 2 small oranges)
whip the mascarpone and condensed milk together until smooth
add the lemons/oranges and stir in
spoon onto base and put in fridge for about 4 hours
you can add a topping if you want
eg. some strawberries - a good handful
put in a pot with a wee bit water and a wee bit sugar (sorry I don't tend to use measurements, just guesstimates
bring to boil and simmer til it turns into a kinda jammy type stuff and spread over top
or a flake crushed and sprinkled over it. best to sprinkle before you put in fridge.
It actually tasted quite nice with both toppings
