2 tbsp red or green curry paste
1 tin reduced fat coconut milk
100ml chicken stock
1 onion, chopped
1 tbsp vegetable oil
100g fine green beans, halved
1 tbsp mango chutney
2-4 chicken breasts
boiled rice to serve
1. Heat oil in frying pan, add curry paste and onion cook until softened, add chicken fry until cooked.
2. Add mango chutney, coconut milk and chicken stock, simmer for 20 mins.
3. Add green beans and cook for further 5 mins.
Serve over boiled rice, i use Thai Jasmine Rice , you just throw it in a pan of boiling water for 10 mins and drain.
