I would imagine the camera was on continuous shoot mode at probably about 10 frames per second to captute that perfect one shot. When taking some shots at this years O'Neil surfing competition I noticed all the pros were on this setting as there cameras sounded like machine guns during any action moments!! (the 800mm fast, telephoto lenses also helped)

No disrespect to the fabulous images but technology will play a part in capturing this sort of view.
