Sounds good nicnic, may give it a try ;-)
i do a tomato and red pepper soup
sweat in butter about 3 med onions, 2 sliced carrots and 2 chopped red or orange peppers then add a tin of chopped tomatoes in garlic or plain will do and roughly 2 tbsps tomato puree and a half teasp sugar
add water about two and a half to three pints and two veg stock cubes, give it a stir and simmer till carrots are cooked then blend
its worth trying to get the tomatoes in garlic if you can
I was feeling a bit bored so I've just put on a pan of tomato/red pepper sort of soup, amalgamating all the recipes here.
Chopped an onion and a largish potato and what was left of a red pepper and a yellow one, added a few chopped sundried tomatoes, a drop of puree and a tin of chopped tomatoes and a couple of cloves of garlic chopped. Also added a teaspoon each of cumin and paprika and some veg stock.
Waiting with bated breath to see what happens;)
