    Default Microwave clootie dumpling

    I personally have not had the courage to try this recipe, as my microwave is 850 watts, but i have been assured it works

    Microwave Clootie Dumpling

    ½ pint Water ¾ Cup of White sugar
    ½ lb Mixed Fruit ½ lb Sultanas
    ½ lb Margarine ½ lb Plain Flour
    2 Eggs ( Beaten ) 1 Teaspn Baking soda
    1 Tblspn Mixed Spice 1 Tblspn Cinnamon
    1 Tblspn Treacle


    Put Water, Sugar, Margarine, Both spices, Fruit & Treacle, in a pan and
    bring to the boil. Simmer for 1minute, remove from the heat.
    Beat in the Flour, Baking soda, Eggs.
    Line a microwaveable bowl with Cling Film, leaving a 3 Inch overlap.
    DO NOT COVER
    Cook at 650 watts or High for 9 minutes.
    Allow to cool
    Place a plate on top and turn out.

    Unhappy Microwave clootie dumpling

    Tried this recipe a few months back and it was ok not quite as good as the original clootie dumpling. We had it as a pudding with custard and it wasn't too bad.

    My late father used to do a microwave dumpling and it tasted every bit as good as traditional...which he also made.
