    Default Bramble Jam/Jelly

    Last year we made som bramble jam with some apple in it to help it set - whilst it was good it was not great - so has anyone got a recipie and method for making a clear bramble jam/jelly please ?

    I use one apple for every pound of fruit. I boil the fruit down with only enough water to just cover it. Boil until it is sufficiently pulpy and then strain through a muslin cloth - do not squeeze it as then it goes cloudy. Add the sugar afterwards. Add 1lb of sugar for every litre of juice and boil until the setting point has been reached.

    Oh and don't use eating apples - cooking apples have more pectin

    This seems to work for all fruit...

    Mrs M made some of this for me which is nice.

    Diabetic Strawberry Jam Recipe

    Ingredients
    · 1 (20 oz) package frozen unsweetened strawberries, thawed plus juice .
    · 8 tsps artificial sweetener .
    · 2 tbsps cold water .
    · 1 1/2 tsps unflavoured gelatin

    Directions
    · Step #1 Soften gelatin in cold water.
    · Step #2 In a heavy saucepan bring strawberries & juice to a boil.
    · Step #3 Reduce heat & let simmer until soft.
    · Step #4 Add softened gelatin & stir til completely dissolved.
    · Step #5 Cool.
    · Step #6 Stir in artificial sweetener.
    · Step #7 Chill before serving.

    I really cheated and made my Bramble Jam in the microwave!! so easy and everyone says how lovely it is.

    800g Brambles or rasps or strawbs
    1kg Jam Sugar
    Knob of butter

    Put fruit in a large microwaveable bowl and cook for 5 mins on high.
    Mash fruit with tattie masher, stir in sugar and add knob of butter.
    Microwave on high for 14-16 mins, stirring halfway through. The mixture must boil vigorously for 4 minutes, I watch for the rolling boil and then set a timer.

    Jar up and wait till it cools before spreading on your toast - if you can!

    We are really lucky since we moved to Inverness, we have a large areas of brambles and rasps and elderberries right at our back door. Husband has discovered the joys of home brew again.


    * Jam sugar has got added pectin so would this presumably save on using an apple?

    My mum used to use crabapples to set it, not sure if they grow up here - always entertaining to see the half eaten results of unwary scrumping.
    Is scrumping a word up here? It tasted really good too.

    Marlyn - I'll have to try that! I know what you mean about all the wild fruit - it's wonderful isn't it. My breakfast for a while consisted of grazing on wild raspberries on my walk to work

    Honestly Leanne it is so good and so easy - can't believeanyone would stand for ages stirring and testing and all the other gubbins that is involved - I have made raspberry and strawberry this way too.

    Re grazing - its the only way that we can get soft fruit into our youngest - think she may be a professional forager when she grows up!
