I know that we have had other banana recipes but this is just too good to leave out!
8 oz plain flour, 1 teasp bicarb soda, half teasp cream tartar, pinch salt, 4 oz butter or marg, 6 oz caster sugar, juice and rind of 1 lemon, 3 tablespoons milk, 2 med bananas mashed (dont need to be too ripe), 2 beaten eggs, granulated sugar for the top.
Put flour, bicarb of soda, cream of tartar and salt in bowl, rub in marg until looks like fine breadcrumbs, add sugar. Add lemon juice to milk and add in mashed bananas, add lemon rind, stir in eggs. Then add the wet ingredients to the dry ingredients by making a well in the flour and mix well. Put into a 2lb loaf tin and smooth the top. Sprinkle granulated sugar on the top. Bake at 180 for approx one hour to one and a quarter hours depending on your oven. You can eat it once cool or cover in cling film for a couple of days then the sugar on top goes all sticky and moist. Mmmmm.
