    Default carrot cake recipe please

    has any one a quick and easy carrot cake recipe ???

    i love moist cakes (or should that be most )

    Default yummy carrot cake

    I've tried and tested this recipe many times everyone loves it and it's fool proof:-

    Ingredients:
    12oz castor sugar
    8oz margarine
    4 eggs
    6oz self-raising flour
    4oz plain flour
    2 teaspoons cinnamon
    half teaspoon bicarbonate of soda
    12oz peeled grated carrots

    Method;
    cream marg and sugar then add eggs and (flour,b.soda,cinnamon) give this all a good mix. Grate carrots and mix these in. pop into greased and lined baking tins. cool before topping.
    Topping:
    4oz soft cheese (philly)
    icing sugar to taste
    rind and juice of half lemon
    enjoy this is magic.

    Default Spicy Carrot Cake

    Hi Kitty Kat

    Here is another one for you to try out. It has been years since I made it but from what I remember it was great – probably the main reason I stopped making it was because I kept eating it!!!!

    Cake Ingredients

    6 oz carrots (peeled and grated)
    4 oz self raising wholemeal flour
    4 oz self raising flour
    5 oz light brown muscovado sugar
    2 oz walnuts, chopped
    2 bananas mashed
    5 fl oz vegetable oil
    2 x 5 ml tsp baking powder
    3 eggs (size 3), beaten
    1 x 5ml tsp mixed spice

    Mix above thoroughly and bake in a greased 21 cm (8”) round tin for 45-50 minutes (Gas Mark 4/180°C/350°F).

    Topping Ingredients

    Mix 3 oz unsalted butter and 3 oz cream cheese.

    Then add 2.5 ml vanilla essence and 8 oz icing sugar.

    Nibbler, that is a great recipe. It makes a lovely moist, tasty (so I am told) cake.


    As I am on a diet it is the best cake I could make just now, cos I can't get past the thought of the oil so can't bring myself to eat it.


    Everyone else appreciates it though lol

    Ingredients

    375g caster sugar
    250g butter (unsalted)
    4 medium sized eggs
    450g grated carrots
    1 orange (juice of)
    150g chopped almonds
    2 grated orange rind
    250g plain flour
    2 tsp bicarbonate of soda
    1 tsp mixed spices
    1 tbsp vanilla essence
    pinch of salt
    Icing

    225g soft cheese
    65g unsalted butter
    (make sure both butter and cheese are at room temperature)
    400g sifted icing sugar
    1 tsp vanilla essence
    Method

    1. Heat up an oven to 180C/350F/Gas 4.
    2. Grease a 23cm/9in cake tin.
    3. Beat the butter, orange rind and sugar until fluffy.
    4. Add the eggs (not too fast), beat them well one by one before adding the rest.
    5. Add the grated carrot and chopped almonds.
    6. Add the vanilla essence and orange juice.
    7. Sift the flour, bicarbonate of soda, spice and salt together, then mix this into the cake mixture.
    8. Move the mixture into the prepared spring-form tin and bake in the oven for about 45 mins to 1 hour. To check if the cake is ready, insert a skewer into the middle of the cake, if this comes up quite clean, then the cake should be done.
    9. For the preparation of the icing, cream the cheese and the butter together until they are nice and smooth.
    10. Add the icing sugar and vanilla essence, and mix until smooth. This frosting should be quite rich
    11. Spread the icing generously over the top of the cake and you are done!
