1 oz Butter
1 Med Onion finely Chopped
8 ozs Mushrooms Chopped
1 oz Plain Flour
1/2pt Milk
1 Pt Hot Chicken Stock
4 Tbls Single Cream or leftover Double
Salt & Pepper to taste
2 mushrooms thinly sliced to garnish

Old Recipe so based on a 700w Microwave

Place butter and onion in a large bowl cover and cook for 5 mins stir in the chopped mushrooms cover and cook for 3 mins
stir in the flour gradually blend in the milk season to taste cover and cook for 2 1/2 mins
stir in the hot stock puree with a blender or a food processor pour back in the bowl
taste and adjust seasoning stir in the cream reheat uncovered for 3 mins
pour into 4 soup bowls garnish with sliced Mushrooms


I had to conjure up some Soup rather quickly over weekend and forgot about this recipe so thought Id Share it enjoy
