Parsnip & Apple soup
Parsnip and Apple Soup
3-4 medium/large parsnips 1 cooking apple (or 2 dessert apples)
1 medium onion ¼ teasp nutmeg
2 vegetable stock cubes 1 ½ pints boiling water
Peel and chop onion. Peel core and dice parsnips and apple. Dissolve stock cubes in boiling water. Put it all into a pan and add nutmeg (you could add curry powder instead of nutmeg if desired). Bring to the boil and simmer for 20 – 30 mins or until parsnips are soft. Allow to cool slightly then blend or sieve until smooth.
