    Smile mint sauce/jelly??

    Help i have heaps of mint growing in my horses field and would like to make some lovely mint sauce from it all for complimenting my lamb roasts but have no idea where to start, I have made jam before is it a similar process and does anyone have a good recipe?

    Default Mint Sauce/ Jelly

    2 Tblsp Chopped fresh Mint
    2 spring Onions very finely chopped
    2 Lettuce Leaves finely chopped
    3 Tblsp Wine Vinegar
    3 Tblsp Cold water

    Simple combine all ingredients together and place in serving boat
    Its nice to be nice

    One my Mum used to make was a bit unregular but I still use it
    finely chop mint leaves
    for every tablespoon of chopped leaves take a table spoon of sugar
    put in a small serving dish/boat and add just enough table vinegar or wine vinegar to make the mint float and stir ..
    serve on the potatoes... with a knife tip

    have also found that when left for a few days in the fridge it jellyfies.

    Talking mint sauce

    thank you all! will have a go...might end up having a Gordon Ramsey/H ugh fernley whittingstall by the end of it but never the less will start making it, also got a recipe of apple and mint jelly which keeps well so will have a bash at that too!
