Tried this recipe at the weekend for sticking on the bar b q and were lovely

500g lamb mince
grated rind from lemon
thyme (few sprigs )
Pistacchio nuts ( handful )
2 tblspoons cumin
2 tblspoons chilli
Natural yoghurt

grind the nuts, thyme and lemon rind in blender until a fine powder, add lamb and mix well together.
Shape into 4 large kebabs on skewers or smaller if you prefer, grill or barbeque for 10 minutes or until cooked, turning them a few times.

serve up with salad and the yoghurt poured over the kebabs, add some mint leaves if you like.
