    Default Pork Chops with Mushroom Cream Sauce

    Got some pork chops in freezer?
    Here’s a little idea that makes pigs glad to be pork.

    By the way, this is one of my own inventions and if you don’t try it I am going to sulk in the corner and not put any more recipes on here.

    Serves 2

    2 meaty pork chops
    Flour
    Salt & pepper

    1 onion, sliced
    1 clove garlic, crushed and finely chopped
    1 piece of fresh ginger about the size of your little finger, peeled and finely chopped
    1 handful of fresh mushrooms, sliced
    1 green apple, peeled, cored and coarsely chopped
    1 cup of white wine or apple juice
    1 tsp corn flour
    1 cup cream

    Mix the salt and pepper and the flour in a dish and coat the chops on both sides with it.
    Fry the chops in butter until cooked through.
    Keep warm.

    In the same pan, fry the onions until soft.
    Add the garlic and ginger and fry for 2 minutes.
    Add the mushrooms and fry for a further 2 minutes
    Add the apple and fry for another 2 minutes.
    Pour in the wine or apple juice and bring to the boil. Simmer for 10 minutes.
    Mix the corn flour with the cream.
    Take the sauce from the heat and add the cream
    Return to the heat and heat up stirring continually until sauce thickens – DO NOT ALLOW TO BOIL

    Serve on warm plates together with baked potatoes or rice and a green side salad, pouring the sauce over the chops.

    A slight alternative – try coconut milk instead of cream.

    This is the first meal I ever cooked for my missus. That was 20 years ago and she is still here, so she must have liked it.
