    Rite, il start....

    Neep Soup

    get sum neeps, cut them up little bitys, a baked tattie or twa ordinary tatties, peel it an chop it up intil little bitys an'nal.

    cut up a leek, an ingin (an a bit o' celery...if ye want)

    sweit them a bity in a wee dropy o butter for 10 menids?

    then add half water, half milk....bring til e byle (salt an pepper) an when its ready, put it thro 'e blender...

    wee drop o' cream when its bin served

    The org recipe book is now in the making so all of you with yummy recipes get them posted so we use them in the book.
    The plan is to use your org names as the contributers of the recipes ,if anyone is not happy with this let me know.

    will update you with more info when i get it .

    thanks to all for letting this go ahead and those involved making it

    funds raised will be going to The Laurandy Centre-a day care centre for the elderly based in wick.

    Carbonnade A la Flammande


    675g braising steak
    1 large onion
    sliced carrot and/or mushroom
    1oz flour
    Garlic...the more the merrier
    1/2 pint dark ale
    Dijon mustard
    6 slices french bread cut 1/2 inch thick rounds

    Cut meat into 5cm pieces and brown in a little oil..don't crowd the pan.

    Remove meat when browned , lower heat and cook onion until soft..stir in flour and garlic, add water and ale, season.

    Place in casserole dish with the meat and sling in oven at 160/gas mark 3 for 21/2 hours. ( you can add carrots and mushrooms at this point if you wish)

    15 mins before serving skim off any fat and set aside, spread the bread rounds with the mustard and place on top of the dish ( mustard side up) pushing down into it slightly.

    Drizzle with any fat reserved and place back in oven for 20 minutes without the lid

    Hearty enough to serve on its own.

    Homemade Hobnobs

    8oz sr flour
    8oz sugar
    8oz porridge oats
    8oz butter or margarine
    1tbsp syrup or honey
    1 tbsp water
    1/2 teaspoon bic soda

    some cinnamon or dried ginger can be added also chopped nuts

    mix dry ings together in a bowl
    melt butter, syrup and water gently, it doesnt want to be too hot then add bic soda and mix into dry ings thoroughly

    form into balls the size of walnuts or slightly bigger, put on greased trays and flatten with a fork

    180oc 350of or gas 4 for 15 mins till light golden

    lift onto a tray to cool, they should be quite crisp but timing depends on your oven

    should make about 50 depending on how big you make them

    the mix can be spread onto a swiss roll tin and baked at 170oc for 20 mins and cut into fingers when warm

    Speedy 'tear and share' flatbread (9 minutes from thought to table)


    200g strong wholemeal flour
    1/4 tsp salt
    2 tsps baking powder
    125ml water

    Mix dry ingredients, add water to make dough
    Roll to fit frying pan 1cm thick..fry 5mins then stick under grill for 4mins.

    Add spices such as garlic,cummin, black pepper etc depending on what you intend serving it with.

    Watermelon and Onion Salad

    Here is one for the summer nights.

    1 watermelon, seeds removed and cut into bite sized pieces.
    1 tbsp chopped fresh mint
    1 large onion, (preferably a Spanish onion) thinly sliced.

    For the sauce
    2 tbsp olive oil
    1 tbsp fresh lemon juice
    ½ tsp clear honey
    ½ clove garlic, crushed
    1 tsp mixed herbs
    Salt & pepper

    Put the lemon pieces in a bowl and sprinkle on the mint and mix.
    Put all the sauce ingredients in a screw top jar and shake well to mix.
    Put the onions in a separate bowl and mix with the sauce.
    Leave the melon and onions for an hour, stirring the onions occasionally.
    Mix the onions with the watermelon just before serving.

    This may sound strange but, believe me, it tastes heavenly and is unbelievably refreshing on a warm summer evening.
