Cucumber Soup
This is a nice light soup. Just the thing for starters.
225g / 8 oz lean pork
½ tbsp corn flour
1 tbsp dry sherry
2 tbsp soy sauce
1 cucumber
900 ml / 1 ½ pints chicken stock
1 tbsp white wine vinegar
½ tsp salt
Cut the pork into thin slices and mix with the corn flour, sherry and 1 tbsp of the soy sauce. Leave to marinade for half an hour.
Peel the cucumber and slice it thinly.
Boil the stock in a saucepan and add the rest of the soy sauce, the vinegar and salt.
Add the cucumber and simmer for one minute.
Add the pork and simmer for 10 minutes.
Serve warm.
