Something different for the versatile tattie.
Serves 4 to 5
1 large onion, finely chopped
1 clove garlic, crushed and finely chopped
285g / 10 oz frozen spinach, thawed and chopped
675g / 1 ½ lb tatties, boiled and mashed
1/3 tsp ground nutmeg
170g / 6 oz Cheddar cheese, grated
Heat some oil in a pan, add the onions and garlic and fry until soft.
Squeeze all the liquid out of the spinach and add to the pan together with the tatties, nutmeg and cheese. Add salt and pepper to taste and mix well.
Allow to cool.
Dampen your hands with water and form the mixture into balls a bit smaller than tennis ball size, then flatten slightly.
Coat the patties with flour. (Put some flour in a clean plastic bag, add the patties one at a time and give them a shake).
Fry them on each side in a little hot oil for a few minutes until golden brown.
These go with almost everything.
