Thanks for posting that recipe Anne. I was just the other day thinking about making them but seem to have lost my copy of the recipe!
Macaroon Bars
1 Medium Floury Potato Peeled and Boiled
boiled weight 2 3/4 ozs
1lb Icing Sugar
7-9ozs Quality Chocolate
Milk or Dark or Mix
4 1/2-5 1/2ozs Desiccated Coconut
Boil potato in unsalted water drain and dry
place in a food mixer not processor
and mix with the flat beaters slowly
adding the sugar slowly until a smooth and stiff paste is formed
tip into a 9x7 lighly buttered tin and smooth out
chill for a hr or put in the freezer for 20mins until hard
Melt the chocolate in a shallow bowl
toast the coconut by dry frying in batches
tip coconut onto a plate
cut and separate the mixture into cut bars
dip each bar in the chocolate then in turn dip in coconut
place on greaseproof paper to harden
this recipe is taken from A cook book compiled by a Lady and published for her 80th Birthday by her Grandson

We used to make these as kids, thanks anne for the reminder, going to make with my lot
these sound yummy.......havent tried home made ones before
