Salmon with a Herby Oatmeal Crust

3 Salmon Fillets
2 tablespoon Virgin olive oil
2 3/4ozs Oatmeal med
zest of 1 small unwaxed Lemon
3 tablespoons fresh chopped herbs
salt and freshly ground pepper

preheat oven to 200c gas 6 or 7
brush the salmon with oil
combine oatmeal lemon zest and herbs
season with salt and pepper
dip each fillet surface with the mixture
place on a baking tray
cook for about 10mins or until just done

Serves 3
