Carrot Soup
This is super easy and very healthy version of carrot soup:
Carrot Soup
1 tbsp olive oil
2 lbs carrots (about 5 cups) peeled and sliced
1 chopped onion
2 medium potatoes peeled and diced
6 cups vegetable stock
1/2 tsp salt
1 tsp sugar
black pepper to taste
1 tsp mixed herbs
Heat oil in large saucepan. Add vegetables and cook over medium heat, turning with a wooden spoon until thoroughly coated with oil. Add water, stock cubes, salt, sugar, pepper, and herbs. Simmer until tender. Put into a blender and whisk until smooth.
(2 cubes vegetable stock and 6 cups water can be substituted for the vegetable stock.)
