Got this one from a friend and it's yummy!
12oz plain flour
12 oz castor sugar
4 medium eggs
1 lb carrots, grated
1 tsp vanilla essence
2 tsp cinnamon
300 mls vegetable oil
2 tsp baking soda
Oven: 150 Tin: 2 x 8” greased & lined Time: 1 hour
Beat eggs & sugar until thick & fluffy, then mix in oil and vanilla.
Mix dry ingredients and blend with egg mixture.
Stir in carrots.
Pour into tins and bake.
Cool on a wire rack.
Topping
4 oz full fat cream cheese (doesn’t work the same with low fat one)
½ lb icing sugar
2 oz butter
1 tsp vanilla essence
Cream butter and cheese and add sugar and vanilla.
Spread on cake.
Best kept in fridge.
