    Question Chutney Recipes

    Looking for some different / unusual chutney recipes to try out?

    Default Mango Chutney

    This one's a favourite with my family

    1 lb mangos, peeled & chopped
    8 oz cooking apples, peeled & chopped
    1/2 tsp salt
    2 onions, peeled & chopped
    1-2 inches of ginger, peeled & grated
    10 oz brown sugar
    1 pt spiced vinegar*

    Put the mango and apples in a bowl and sprinkle with the salt then leave overnight. Next day rinse and drain these, then put into a pan with the onions, ginger and vinegar. Bring to the boil and simmer gently till fruit and onions are soft. Stir in the sugar and simmer, stirring occasionally, till thick. put into warm jars and seal. Best left for a week or two for flavour to develop fully.
    * you can buy pickling vinegar, but its as easy to make your own by adding pickling spice (or a mixture of spices of your choice) to cold vinegar and leaving for about 6 weeks. If you're in a hurry you can add the spices to the vinegar and simmer for 10 minutes but the flavour isn't as good. Remember to sieve before using.

    Default Date Chutney

    2 blocks of dates
    1 onion,
    4 oz raisins
    4 oz walnuts
    1 tsp mixed spice
    1/2 tsp salt
    4 oz sugar
    1 pt vinegar
    pinch cayenne

    Mince or finely chop dates, raisins, nuts and onion. Put into a pan with the vinegar, spices and salt. Bring to boil and simmer, stirring occasionally, till tender. Add sugar and cook till thick. Put into warm jars and seal.
