groatsgirl, I have a recipe for a very yummy fruit cake, lovley and moist and very moreish. Its a low fat version but you wouldn't know it. Will send if you want.
Here is the recipe..and by 'moreish' I mean you want to keep going back for more!
FRUIT CAKE
Serves 12
115g/4oz glace cherries
175g/6oz dark muscovado sugar
115g/4oz sultanas
115g/4oz currants
115g/4oz raisins
300ml/half pint cold tea
300g/10oz SR flour, sifted
1 egg
Mix cherries, sugar, dried fruit and tea in a large bowl. Leave overnight until all the tea has been absorbed into the fruit.
Preheat oven to 180C/350F /Gas 4
Grease and line a 1kg/21/4 lb loaf tin
Add the flour and then the egg to the fruit mixture. Beat thoroughly until well mixed.
Pour mixture into prepared tin and bake for one and a half hours or until a skewer inserted into the centre of the cake comes out clean.
Optional; ############### the top of the cake with a skewer and drizzle over 3tbps Irish whiskey while the cake is still hot.
Allow to stand for about 5 mins, then remove from the tin and cool on a wire rack.
Cooks Tip;
If time is short, use hot tea and soak the fruit for just 2 hours.
I have also used fruit teas, or Earl Grey for a slight difference.

Farmhouse Mincemeat Cake
5 oz marg 8 oz S R flour
5 oz soft brown sugar 1 tsp mixed spice
3 eggs ¼ pt orange or apple juice
1 jar mincemeat 2 oz ready to eat prunes, chopped
Topping:
2 tbsp demerara sugar 2 tbsp chopped nuts
2 tbsp porridge oats
Cream marg and sugar until light and fluffy then gradually beat in eggs. Fold in the flour, spice juice mincemeat and prunes. Turn into a greased, lined 8” deep tin. And level the top. Mix the topping ingredients together and sprinkle over cake. Bake at 160 fan oven /gas 4 for 1 ¼ - 1 ½ hrs, until firm to the touch and an inserted skewer comes out clean. Leave in tin to cool, then turn out onto a wire rack.
