    Default Chicken with red onion

    Ingredients:

    Chicken breast
    Red onion
    Tomato
    Sweetcorn
    Broccoli
    sour cream
    Balsamic vinegar
    pinch of salt
    Tin foil

    ( or other veg according to taste.)

    Method:

    Cut a square of tinfoil large enough to wrap around the chicken breast but leaving plenty room.

    Place the chicken breast on the square and without closing in the chicken, pull up the tinfoil so that any vinegar wont run out.

    Chop all veg that needs chopped ( slice tomato) throw them in with the chicken, add a good drizzle of balsamic vinegar. Place tomato slices over the top, add a pinch of salt.

    Wrap up into a parcel, put into the oven at 120 degrees for an hour.

    Serve on plate with a dollop of sour cream!

    This sounds really nice. How much of each ingedient do you put in?

    As much or as little as you like. The great thing about this recipe is that it can be addapted so many ways

    Brilliant. Family j4bberw0ck has just finished a meal to this recipe, with salad potatoes (boiled and with a little butter on them), steamed broccoli and steamed carrots. Universally approved of - thank you, hibeechick.

    Since I cooked it it's added to my store of brownie points, too, which is terrific .

    Mrs J is one of the Health Police and she particularly approved of the low fat / high veg count. Highly recommended!

    Glad everyone has enjoyed it. Was always a good meal at college, healthy and easy to cook! Left plenty of time for erm..... studying!!! x
