Im going to be putting a few of my favourite recipes up here within the next couple of days.

Ingredients.
-3 egg whites
-175g caster sugar
-1tsp white wine or raspberry vinegar
-1tsp cornflour

For the Filling.
-300g (10fl oz) double cream
-2tbsp elderflower cordial
-1 ripe mango, diced
-2 kiwi fruit, sliced
-1 papaya, diced
-2 passion fruit
-zest of one lime

Method.
1. Preheat the oven to 130*C/260*F. Using a dessert plate as a guide, draw a 20cm circle on a sheet of baking parchment. Turn over the paper and use it to line a baking tray.
2. Seperate the eggs very carefully, putting the whites into an absoloutely clean,dry, large bowl.
3.Whisk the egg whites until soft peaks form. Add half the sugar and whisk until the meringue is stiff and glossy.
4.Gradually whisk in the remaining sugar, then the vinegar and cornflour.
5.Use a metal spoon to spread the meringue within the arked circle and make a slight hollow in the centre to hold the filling later. Bake for 1 hour or until crisp outside and soft inside. allow to cool on the baking tray.
6.Use a metal spatula or fish slice to ease the pavlova off the paper and onto it's serving plate before starting to fill and decorate it.
7.For the filling, whisk the cream until it is stiff, then beat in the elderflower cordial. Pile into the hollow of the nest.
8. Arrange the fruit on top of the creamy filling. You can finish with passion fruit seeds and decorate the finished pavlova with curls of lemon zest.
