    Default Peppermint slice recipe please

    I looking for a recipe for peppermint slice, if anyone has

    In a pot melt 4ozs margarine, add 1tablespoon milk,2tablespoonss caster sugar,1tablespoonof syrup and 1tablespoon of drinking chocolate. then add to mixture 8ozs of crushed tea biscuits and press in to a swiss roll tin.Leave to set.
    Mix 8ozs of icing sugar(sifted) with half teaspoon of peppermint essence and alittle warm water to mix. put on to biiscuit mixture and allow to set. Cover with melted chocolate and allow to cool in fridge Cut in to pieces and enjoy.

    I usually cheat and buy the "Fiona Polson" peppermint slices !!

    I do a cooked version of the base which is maybe a bit crunchier/lighter.

    4oz marg
    4oz SR Flour
    4oz soft brown sugar
    2 teaspoons cocoa powder
    2.5 oz crushed cornflakes

    Method:
    Melt marg, add to dry ingredients and bake in a swiss roll tin at 180c for about 20 minutes. Cool and ice with 8oz icing sugar mixed with 1.5 tbsp of water, half a teasp.of peppermint essence and a little green food colouring if you wish. Cover with chocolate.
