    I know we no longer have a recommendations slot but "whatever"

    I've just made a chocolate and beetroot cake using the beet from my JoG veg box - boy oh boy!!! Absolutely fab - the best way to use beetroot imaginable.

    Sounds yummy, I know what we're having for dessert tonite! Also good is redcurrant and beetroot jelly for on sandwiches.

    In case anyone is interested in other recipes for beets (I too made a cake with my Puffin Farm veg box beetroots). I substituted the carrots for grated beetroot in this recipe...my family went mad for it!

    9oz grated beetroot (remember it stains, use a plastic bag on your hand)!
    5oz marg
    7oz soft brown sugar
    2 large eggs
    7oz SR flour
    half tsp salt
    2 tsps mixed spice
    2 tsps baking powder
    4oz sultanas
    3oz chopped walnuts

    Made a whipped cream and icing sugar frosting for filling.
    8inch round cake tin
    180c, 350f or gas mark 4

    Melt marg, stir in grated beetroot and sugar + add beaten eggs.
    Sieve flour, salt, baking powder, mixed spice into mixture. Beat until smooth batter*.
    Mix in sultanas and walnuts
    * If batter is dry add 2 tbsp of milk (I didn't need to, but its in the recipe)!
    Get mixture in the cake tin and level'ish.
    The mixture is bright pink from beets, but once cooked its not that colour.
    Bake cake for 1 hour (took mine out after 55mins after testing with a skewer).
    Once cooled the cake can be cut + filled with your choice topping.
    Delish..enjoy!
