    Question Rock cakes

    Has anyone have the recipe for rock cakes?I can't find my one. Thanks.

    half Ib flour 3oz marg 3oz currants 1 egg 3ozsugar pinch of salt 1oz candid peel a little milk half teaspoon baking powder.
    METHOD...Put the flour salt and sugar into a bowl, rub in the marg. Add the currants and candid peel and the baking powder. Mix stiffly with the egg and milk, and place in rough heaps on a greased baking sheet Bake for 20 mins in a moderate oven

    Here isone that I use all the time

    4 ozs butter, 4 ozs demerara sugar, 8 ozs self raising flour, 6 ozs sultanas and currants mixed, 2 ozs chopped peel, 1 egg and 1/4 pt milk

    Grease and flour two baking sheets and preheat the oven to 190 deg centigrade slighty less for a fan oven, Gas mark 5.
    Method: Cream butter and sugar briefly, add the remaining ingredients, mix well and heap in a little rough mounds on the the baking sheets and bake for 15 - 20 minutes.
