Apple Chutney

I N G R E D I E N T S

8-10 tart apples, peeled, cored & coarsely chopped
1 clove garlic, minced
1 TB. fresh ginger root, minced
1 tsp. cinnamon
1 tsp. cloves or allspice
1/2 tsp. salt
1/2 cup (packed) brown sugar
1/3 cup cider vinegar
Dash of cayenne pepper.

1. Place all ingredients except garlic in a medium-sized saucepan.

2. Bring to a boil, lower the heat, and simmer uncovered for 45 minutes or until everything is well mingled and very soft. Add the garlic during the last 5-10 minutes of cooking.

3. Cool. Then transfer to sterile glass jar with lid and chill.

Great on sandwiches, indian dishes, on oat cakes or crackers with cheese such as Jarlsberg or Cheddar or many other things! Makes your house smell lovely when cooking!!
