    Artichoke Pasta

    I N G R E D I E N T S

    1/2 bag or enough for 3 or 4 servings of whole wheat pasta (spaghetti)
    1 tin Artichoke Hearts, sliced or cubed
    6 cloves Garlic, chopped (I'm a garlic fanatic.. if your not.. only 1 or 2 cloves!)
    Juice of one lemon (2-3 TBS)
    Fresh Parsley, chopped 1 cup not packed.
    1/2 cup Olive Oil
    1/4 tsp. cayenne pepper
    Sea Salt & Black Pepper
    Parmesan Cheese
    **Most times I added some slightly steamed till wilted greens.... any kind... Kale, Spinach, Chard or others whatever I've got at the moment... then mix in with the Artichoke mix before you stir it into the pasta.

    1. Prepare all ingredients except pasta in small saucepan and put on low heat.

    2. Boil large pot of plenty of salted water and add pasta. Cook till al dente.

    3. While the pasta is cooking slowly simmer sauce to heat and blend thoroughly.

    4. Drain pasta & put back in large pot. Add sauce and mix well.

    5. Serve topped with plenty of parmesan cheese.

    Easy & very quick! In my opinion.. the ONLY way to eat spaghetti. You can also add black or nicoise olives. Serve with a herb salad... . Stores well in fridge and can be reheated in a skillet. Enjoy!
