Balsamic Green Beans


I N G R E D I E N T S

1lb./500g. fresh green beans
1/4 cup olive oil
1/4 cup balsamic vinegar
2 tbsp. fresh chopped parsley
1/4 onion, finely chopped
1/2 cup toasted pine nuts
sea salt & ground fresh pepper

1. Wash and trim beans and boil in water to desired softness.

2. Slightly toast the pine nuts.

3. Meanwhile, mix together the olive oil, balsamic vinegar, onion, & parsley in a large serving bowl.

4. Drain cooked beans and add to the dressing then add the pine nuts and toss well.

5. Serve hot or chilled 20 minutes with sea salt and ground pepper.

Serves 4

* Toast pine nuts by spreading on baking tray and toasting in a medium oven till slightly brown and aromatic. approx. 3-5 minutes.
