    Default crisp fairy cakes

    I got a new oven recently and I have noticed lately when I do fairy cakes they come out lovely when ready but after cooling and icing they feel crisp on top but when I bite into them the middle is soft as it should be.

    What is happening here ??

    Oven maybe a bit too hot or maybe take them out a couple of minutes earlier I usually cover mine with a clean tea towel while they are cooling.
