    Default Gingerbread?

    Anyone got a decent gingerbread recipe please.

    Make a train out of a kit, but fancy trying it from scratch.

    Found my fave one..Lauren took the recipe book to bed with her!
    12 oz plain flour
    1 1/2 tsps ground ginger (I usually add more though)
    1/2 tsp ground cinnamon (I usually add more)
    1 tsp bicarb
    4 oz butter, chilled
    6 oz light muscovado sugar (doesnt matter if you use dark the biccies end up a bit darker thats all)
    1 medium egg
    2 tablespoons golden syrup (or treacle ..end up bit darker)

    1
    heat oven to 180 deg C
    350 deg F
    gas mark 4
    line the baking trays with greaseproof or parchment paper
    mix the flour,ginger,cinnamon and bicarb in a bowl
    2
    cut butter into chunks and rub into the mix until it looks like breadcrumbs
    stir in the sugar

    break the egg into a small bowl with the syrup and mix, then add to the flour and squeeze into a smooth dough

    roll out the dough until its about 1cm thick...I usually go for slightly less
    cut out your shapes and squeeze the scaps up and re roll and cut out more shapes.
    Bake for 12-15 mins

    Leave on the tray for a few mins before lifting and cooling on a wire rack...then decorate

    If in super organised mummy mode you can make up the mix and cut out the shapes and leave on the baking parchment on the trays or like I do use bits of cereal box as a tray as I need the trays and bung in the freezer ready to pop in the oven later!......handy for the mummy I want to do baking moments when you cant be bothered!
