    Hi guys...

I just made my best dinner yet!!

    Ingrediants -

2 decent sized carrots (Peeled and diced)

A hand full of green beans (washed and diced)

    750g of diced pork fillet

    25g plain flour

    600ml of ham stock

    432grams of choped tinned pinapple

Add a fair amount of sherry

    salt and ground black pepper

    Also required a slow cooker

    1. Prep. all veg... Dice and peel everything!
    2. Coat the pork in flour (put the diced pork in a plasic bag with the flour and shake to coat it)
    3. Put olive oil in a frying pan and brown the onion and garlic together
    4. Once the onion and garlic are browned add the veg
    5. Once cooked put the veg aside
    6. Put some more olive oil in the pan and brown the floured pork
    7. Add the pineapple chunks to the chicken and cook (keep the juice aside)
    8. Make up the ham stock in a mug
    9. Put the pork and veg into a big pan and add the ham stock, the pinapple juice and the sherry then add the veg and the pork and add salt and pepper to taste.
    10. Bring to the boil
    11. Put the whole lot into the heated slow cooker and leave to cook for 3 or 4 hours, stirring every so often.

I made mashed tatties to go with it and it was lovely! By the way this will probibly feed 4.

Enjoy and let me know how you get on!
