    Water or stock,
    Cauliflower,
a couple of sticks of finely chopped celery
    one large onion finely chopped,
    2 oz marg
    2oz flour
(or 2 oz cornflour mixed with a little water for gluten free)
    Nutmeg

Melt the your marg and lightly soften your onion and celery, blanch without colour,
mix in your flour, add stock slowly, beating out lumps. add cauliflower (frozen is acceptable) and cook over a hot stove,

when cooked put it through a blender until smooth, serve hot with a generous sprinkling of nutmeg.

    Bon Apetite!!
