Boxty
This is basically the Irish version of a tattie scone (with a wee tweek).
1x 30g pack of cheese sauce
2x 128g packs batter mix
350ml milk
2 eggs
2.5 kilo potatoes
Make the sauce and batter mix up using the eggs and the milk.
Peel potatoes and grate on middle thinggy on grater. Put grated spuds into a tea towel and force out all the liquid.
Pour batter mix on to the dry spuds, add salt and pepper and mix well.
Heat oil in a frying pan or griddle and spoon the mix on like you do with drop scones.
Cook on both sides till browned and place under the grill or in the oven till all batch cooked then enjoy.
Some people are like Slinkies. They're really good for nothing. But they still bring a smile to your face when you push them down a flight of stairs.
