Enough potatoes for four people. When cool, mash and add two egg yolks, one quarter pound grated cheddar. Add four whisked egg whites which are firm. Slowly fold the egg whites in to the potato mixture. Transfer to baking dish, sprinkle top with grated parmesan and bake in hot oven for twenty minutes. Lovely on its own or an accompanient to smoked fish or meat.

I do this sometimes with jacket potatoes too - scoop out the cooked potato leaving the skin intact, mix with the same things and put back into the skins and into the oven :D can put other things in the filling too, won't rise as much but extra tasty :cool:
