I have always used the meat and fat juiceses from the roast as the base for this thish dish, then add the onions and tatties. Cook down and towards the end add any left over roast meat, chopped into wee bits. Steam away. Result wonderful. Any thoughts!! A friend of mine adds oatmeal, but I found it went a bit too stodgy.

A wee bit of oatmeal is OK. Not too much mind.


As an aside:

The old hotel I used to work in got taken over, and the new owner had a bright idea.

"Let's get the kitchen up and running again, and we'll serve up some stovies for the regulars, cheap and cheerful like."

So the sign went up - "Stovies - £1.50".

The first night came, and the place was busy. One of our precious regulars, being of Lairg's parsimonious crofting stock, was awfy wary of the price:

"Stovies for £1.50?!! But how many will I get...?"

Oh, how we laughed. [lol]
