Hi has anyone got a Cullen Skink reciepe please. I love it used to have it lots when i was little and would like a go myself.

Hi has anyone got a Cullen Skink reciepe please. I love it used to have it lots when i was little and would like a go myself.


I hae never had a go at making it myself, but someone posted this before and I saved it just in case I should want to ahave a go.

Good luck floyed and let us know how it turns out.

Ingredients:

A large smoked haddock (weighing around 2 lb)
1 medium onion, finely chopped.
1½ pints (900ml) milk
2 tablesthingys butter
8 oz mashed potato
Salt and pepper
1 bay leaf
Chopped parsley
Water
Triangles of toast (as an accompaniment)

Method

Cover the smoked haddock with water, in a shallow pan, skin side down. Bring to the boil and simmer for 4/5 minutes, turning once. Take the haddock from the pan and remove the skin and bones. Break up the fish into flakes, return to the stock and add the chopped onion, bay leaf, salt and pepper. Simmer for another 15 minutes. Strain, remove the bay leaf but retain the stock and fish. Add the milk to the fish stock and bring back to the boil. Add enough mashed potato to create the consistency you prefer (don't be afraid to make it rich and thick!). Add the fish and reheat. Check for seasoning. Just before serving, add the butter in small pieces so that it runs through the soup.
Serve with chopped parsley on top, accompanied by triangles of toast.

I have made Cullen Skink and it is lovely. well worth making, but not suitable as a starter of a 3 course meal, as it really fills you up.

I made it with diced tatties, into little cubes rather than mashed, but that's besides the point. its a great soup, and if you ever stop in Cullen, it's worth getting a bowl of it.!!!! The real thing!!!!

I'd never heard of Cullen Skink till I moved up here and I'm curious. Why is it called Cullen Skink? The Cullen bit is obvious from ClachanHope's post, but why Skink if it's haddock? I always thought a skink was a small lizard type creature.:confused:

I used to work in a hotel that did the cullen skink amazing ,
its really easy all you need is :

smoked haddock,
2 huge roughly chopped onion ,
cream,
milk,
bay leaf ,
seasoning,
oh yes and tatties

first fry off onions and bay leaf in butter untill soft without colour, par boil potatoes and drain . add another bay leaf to a pan with the cream and milk mix , add seasoning , potatoes onions and fish and cook gently for 1 hour aprox.

serve in a large round bowl with buttered bread.

done
