If we are just restricting this to carols then it must be 'Silent Night'

My favorite Xmas song is 'I believe in Father Christmas' by Emerson Lake and Palmer.

Mine has to be "Rat-a-tat-tat"... because the way I remember it was being sung in a broad Caithness accent:

My two favourite carols are ‘Oh Holy Night’ (Cantique de Noël)
and ‘Away in a Manger’ not the Cradle song though, although it is lovely sung by the little ones - but to the tune ‘Mueller’ by James Murray.
